RECIPE

Juice of two lemons
2/3 cup of olive oil
2 tablespoons of Bestow Beauty Oil or Beauty Plus Oil
2 teaspoons of Dijon Mustard
2 teaspoon of organic Rice Syrup
Himalayan or Sea Salt and Cracked Black Pepper for Seasoning

Shake all the ingredients together in a large lidded jar. For variations add chopped fresh herb, minced ginger and/or garlic.

RECIPE

1 ripe avocado
1 tablespoon of Bestow Beauty Oil or Bestow Beauty Plus Oil
Juice of one lemon
Small handful of fresh herbs – try basil, coriander or parsley
Himalayan salt and black pepper freshly ground to season

Blitz all together. Add water to the desired consistency. This sauce can be refrigerated for 1 to 2 days as the lemon juice keeps it lovely and green.

 

 

 

 

INGREDIENTS

Makes 6

1.5 cups of cauliflower, processed (this is about one third of a medium sized cauliflower)
1 small onion, chopped
1 small handful of coriander, chopped
1 small handful of parsley, chopped
1-2 eggs, beaten
1.5 tablespoons of rice flour
1 garlic clove, chopped
1 teaspoon of cumin, ground
1/4 teaspoon of turmeric, ground
1 teaspoons of sesame seeds
Himalayan salt
Cracked Black Pepper

Serve with

1/2 cup cooked brown rice
1/2 avocado, sliced or chopped
1/4 small cucumber, sliced
2 cherry tomatoes, halved
1/2 tablespoon pumpkin seeds
1/2 to 1 cup spinach leaves
1 teaspoon chia seeds
Fresh herbs such as mint, coriander and basil

Lemon wedges
Creamy Avo Sauce

Suitable for:
Breakfast | Lunch | Dinner | Snack

Freezer Friendly
These are best stored in the freezer with baking paper between the layers. They can be stored for around 3-4 months. Remember to defrost with enough time before serving. Best reheated in the oven at 200 degrees celsius for 5-10 mins.

METHOD

Place cauliflower in a food processor and pulse. Add all other ingredients, except the sesame seeds, to the processed cauliflower. Pulse in the processor altogether until fine breadcrumb consistency, season well with salt and pepper. Shape large dessertspoonfuls of mixture into a ball (a bit smaller than a golf ball), place onto a baking tray, lined with baking paper and brushed with olive oil. Flatten with your fingers. Mixture will be quite wet which is ok.  Sprinkle with sesame seeds. Bake for 10 mins at 200 degrees celsius, remove from the oven and brush with olive oil. Return to the over to bake for another 10 mins.

Plate with ingredients to serve. Drizzle with creamy avo sauce.

NOTES

Beyond the cleanse, these are perfect to make and have throughout the week for dinners and lunches. You could even have one or two as a snack!

Feel free to use other herbs such as basil or mint. Get creative with your herb and spice combinations, using what you have in the fridge and pantry.

You can make an egg free version if you substitute the eggs with chia or flax egg.

Serve 3 falafels with your dinner and store the remaining 3 in a sealed container in the fridge for your Goodness Bowl on Day 4. If you managed to make more from this recipe, store them in the freezer to use when your cleanse week is finished.

INGREDIENTS

1/4 fresh pineapple
1/4 telegraph cucumber, finely diced
1/2 small red onion, finely diced
A small handful of coriander, chopped
A small handful of mint, chopped
Juice of 1 lemon
Salt and pepper

Optional:
1/4 capsicum, diced
1/2 tomato, diced
1/2 avocado, diced

Side | Snack

METHOD

Slice 3 rings of pineapple about 4-5 mls thick. Keep the remainder of the pineapple to freeze for smoothies (see below). Take the skin off and then finely dice the pienapple rings. Add the rest of the ingredients, with the diced pineapple, to a bowl and mix well.

Place the pineapple salsa in a sealed container in the fridge to be used as directed.

Cut the remaining pineapple into thicker rings and take the skin off. Chop and put in the freezer for smoothies. We find it easiest to store individual portions of pineapple in small snap-lock bags so they are easy to take out and use as needed. One pineapple ring cut into chunks is suitable for one smoothie.

NOTES

Salsa is a great and versatile addition to many meals. The freshness of this salsa means it goes well with fish or chicken dishes and is a great side dish for any BBQ meal. It’s also a great way to use up any leftover vegetables or herbs you have.

Red onions add a tangy flavour and are high in Vitamin A and C, two of the six essential skin nutrients. As well as this they are anti–inflammatory, perfect for those struggling with inflammation in the skin or body.

INGREDIENTS

Makes 8 tortillas

4 cups of cauliflower, processed (this is about two thirds of a medium sized cauliflower)
3 to 4 eggs, beaten
1 good handful of fresh herbs (basil, coriander, parsley)
Add any spices such as cumin or coriander
Salt and pepper
½ cup of rice flour

Suitable for:
Breakfast | Lunch | Dinner | Snack

Freezer Friendly
These are best frozen with baking paper in between so they don’t stick together. They can be kept in the freezer for 3-4 months. Remember to take from the freezer with plenty of time to defrost before use. Either reheat in the oven for 5-10 mins at 180 degrees celsius or in a fry pan on medium heat.

METHOD

Mix all ingredients in a large bowl. Line oven tray with baking paper and brush with olive oil. Place big spoonfuls onto a baking tray and using the back of spoon press out into the size of saucer.
Bake in the oven on 200 degrees celsius for 10 minutes, then brush the top of the tortillas with olive oil and place back in the oven for another 10 minutes.

NOTES

Tortillas are such a delicious meal that can be filled with all sorts of other skin boosting goodies, however store-bought versions are often filled with sodium and undesirable oils, not to mention highly processed flours. These fresh tortillas are made with cauliflower, which is high in skin boosting nutrients such as vitamin C, vitamin B and is also anti-inflammatory. Enjoy getting creative and try out different flavour combinations with the herbs and spices you have in your pantry.
