INGREDIENTS

1 iceberg lettuce leaf
2 Chicken Meatballs (cooked)
½ an avocado, sliced (optional)
½ a carrot, julienned
1 spring onion, finely sliced
1 tablespoon of fresh coriander, chopped

TO SERVE

Dollop of Bestow Beetroot Whip

1 serving

Suitable for:
Lunch | Dinner

METHOD

Place lettuce leaf on a plate and fill with all the other ingredients.  Alternatively, finely chop the lettuce and serve as an element in a bowl along with the other ingredients. Add a dollop of Bestow Beetroot Whip to serve.

NOTES

Iceburg lettuce is deliciously crunchy and the big leaves make for a great base to a lunch bowl. They are very versatile and can be used as a wrap, cup or shredded as a Healing Bowl element.  This meal is fresh, tasty and looks amazing!

Kombucha Time

Drink 100ml of kombucha with your lunch today. Kombucha is a delicious fermented tea drink which is packed full of beneficial microbes to rebalance your gut. You are welcome to enjoy a full glass of kombucha if you wish but 100ml daily is sufficient for the gut benefits. You can buy kombucha from most good supermarkets or organic stores. Brands we love and recommend are Good Buzz, Kombucha King and Daily Organics. Enjoy!

INGREDIENTS

2 medium sweet potatoes, cut into chunks
1 red onion, peeled and cut into eighths
2 tablespoons of olive oil
1 teaspoon of dried herbs (mixed)
Himalayan salt to season
2 zucchini, cut into diagonal chunks

Serve with

150g of smoked salmon
½ avocado, sliced (optional)
1 cup of fresh spinach leaves
8 broccoli florets, blanched
Bestow Coriander Pesto

METHOD

Preheat oven to 200 degrees and line a tray with baking paper. Place the sweet potato and red onion into a bowl with the dried herbs and olive oil, mix to evenly coat.  Spread vegetables evenly onto the tray. Season with salt. Now add the zucchini chunks to the bowl and mix to coat, set aside. Roast the sweet potato and red onion for 30 minutes then remove from the oven and add the zucchini roast for a further 10 minutes.

Place the roast vegetables into a bowl, add the salmon, spinach, broccoli and avocado (if in season). Serve with pesto.

PROGRAMME NOTES

This recipe is for two servings so for the programme you will need to halve the amount of salmon and avocado for one dinner serving. Then also reserve half of all the cooked vegetables and place in a container in the fridge for Healing Bowl Day 7 lunch.

 

NOTES

Did you know dried herbs have high antioxidant levels? Although some vitamins and minerals are lost during the drying process, because dried herbs are used in a more concentrated form,  you usually receive the same nutrients as you would get with fresh herbs. When you don’t have fresh herbs available, its good to know that dried herbs have quite a lot to offer nutritionally.

INGREDIENTS

2 servings

1 carrot, peeled and grated
1 apple, cored and grated
Juice of 1/2 a lemon
2 tablespoons of coconut thread
1 tablespoon of raisins or sultanas
2 teaspoons of olive oil
1 teaspoon of raw honey
½ a teaspoon of ground cinnamon
½ a teaspoon of ground ginger

TO SERVE
1 tablespoon of coconut yoghurt (dairy free)
1 tablespoon of Bestow Beauty Plus Oil

Suitable for:
Breakfast

METHOD

Place all the ingredients except for the olive oil in a bowl and mix well. Heat olive oil in a large frypan for a couple of minutes at med-high heat. Add the mixed ingredients and sauté until soft and fragrant (5 – 10 minutes).

PROGRAMME NOTES

Serve half warm with yoghurt  and Bestow Beauty Plus Oil. Place the other half in a sealed container in the fridge for breakfast on Day 2. We put ours in a glass jar along with the yoghurt and Bestow Beauty Plus Oil, so that we can easily take a portable breakfast to work if we wish to.

It’s a good habit to zest your lemon before you use it and save the zest to add extra flavour to any meal. Lemon zest is a tasty addition to this breakfast.

NOTES

This is one of our favourite breakfasts, as it is equally delicious served warm straight away or eaten cold the next day. It is so easy and you can really mix and match ingredients for variety. Simply use carrot as the base and then add fresh fruit (banana works nicely as it caramelises), dried fruit and spices. It tastes like a dessert and is a sweet treat you can enjoy that isn’t detrimental to your gut health!
